My Original Peach Chuteny

This recipy is best for those who live where peaches are grown.

9 cups of peaches
1/2 cup of white vinigar (cider vinigar if you have it)
2 cups of lightly packed brown sugar
2 cups of leek (washed and cut from the bottom up)
2 cups of firm plums or prunes
2 tsp mustard seeds
1 tsp salt
1 tsp cayenne pepper
1/2 green pepper
5ml cinnamon
5ml yellow curry
5ml ginger
5ml cumin


Start by finely chopping green pepper, place in small bowl, sprinkle with with sugar. Then sprinkle with a little water. Set aside. Then peel, pair and dice peaches. Pit prunes, leave peel, and dice, keep in mind that often chutney's are made with raisins so make the peices "raisin" sized. With expectation of the green pepper, combine all ingredients into a large stewing pot. Start heating on high. Mean while drain the liquid from the green pepper and add to the pot and stir. Bring to a bowl and stir frequently until it becomes brown or thick.

Pore in to jars. Processing time-10 mins.
Tip put some in a non sealed jar directly to be put in your fridge for immediate use.

MMM, I love homeade preserves, and I generally like Chuteny. Though I pretty much make jams out of my own gardens. I don't live in peach country.
