Oatmeal Chocolate Chip Cookies


1 Cup Butter, softened
3/4 Cup Granulated Sugar
3/4 Packed Dark Brown Sugar
2 Large Eggs
1 Teaspoon Vanilla Extract
2 1/2 Cups Quick Cooking Oats
1 1/2 All Purpose Flour
1 3.4 oz. Package Instant Vanilla Pudding
1 Teaspoon Baking Soda
1 Teaspoon Salt
2 Cups Chocolate Chips (Semi-Sweet or Milk Choclate......"Guittard" is my favorite brand)
1 Cup Chopped Pecans

In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, pudding mix, baking soda and salt. Gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts.

Dropped by rounded teaspoonfuls 2 inches apart onto ungreased (I used some Pam) baking sheets. Bake at 325 degrees for 10-15 minutes or until lightly browned. Remove to wire racks. :D

Malted Chocolate Chip Cookies

1 cup butter-flavored shortening (do not substitute butter! Trust Me!)
1-1/4 cups packed brown sugar
1/2 cup malted milk powder
2 tablespoons chocolate syrup
1 tablespoon vanilla extract (Yes! That's 1 TABLESPOON)
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups semisweet chocolate chunks (I chopped up 8 1 oz. squares of Baker's Chocolate)
1 cup milk chocolate chips (I use "Guittard" brand...they're awesome!)

Directions

In a large bowl, beat the shortening, brown sugar, malted milk powder, chocolate syrup and vanilla for 2 minutes. Add egg.
Combine the flour, baking soda and salt; gradually add to creamed mixture, mixing well after each addition. Stir in chocolate chunks and chips.
Shape into 2-in. balls; place 3 in. apart on ungreased baking sheets. Bake at 325° for 12-15 minutes or until golden brown. Cool for 2 minutes before removing to a wire rack ( < Very Important) Yield: about 1-1/2 dozen. (these cookies are a bit flatter than the average chocolate chip cookie) :D
